My name is Tram Le, a Registered Dietitian and true foodie who is originally from California, lived in Hawaii for a couple of years, and now currently located in Houston, Texas! I am not a chef, but I learned how to cook through years of watching my mom and other women in my family whip up meals that will remain in my memory for as long as I live. Because of them, my passion for good food – real food – was born.
I believe in eating more real food that grows from the earth, like whole grains, fruits and vegetables, rather than pre-packaged meals-in-a-box. I’m a proponent of slow food, farm to table, sustainable farming practices, all that good stuff. I love dark chocolate and pistachio-flavored French macarons. I have always believed that the time and effort you spend in making food for others is a labor of love, so in my blog I hope to show you how to make your favorite foods healthier for you and the people you care for.
My philosophy on food and keeping a balance of mind, body, and spirit is simple: nurture your body, nurture your soul.
For three years, I have worked on providing recipes for an entertaining book, entitled Inspired Celebrations, written by Ngoc Nguyen Lay and photography by Caroline Tran. It can be found here as well as Amazon, and the story behind the book is here:

Your blog reminds me of a presentation you gave in our graduate seminar on curriculum. I remember that every slide had an amazing photo and intricate lay-out. You have a good eye!
Anyway, I look forward to future entries! It would be interesting if you incorporated some traditional Hawaiian products into your recipes. Maybe you could even self-publish your recipes at http://www.blurb.com.

Thanks for the comment! I actually do make vegetarian lasagna but have never yet gotten around to writing down the recipe…but for now, you can layer slices of eggplant, zucchini, peppers and ricotta cheese with pasta sauce and the lasagna noodles for an excellent entree! Thanks for the support!

Hi Tram! I just saw your soup recipe and it’s great. I discovered chayote myself in college and loved it but have only really tried it sauteed. This looks like a tasty and healthy new way to use it.
I hope this isn’t too random but I was wondering if I might ask you some advice. I have just left my full-time job to start my pursuit of a career in dietetics, beginning with 2 years of part-time classes for pre-requisites, a masters in nutrition, eventually certification as an R.D. While taking part-time classes, I’d like to find a part-time job (ideally paid) that gives me some experience in the field. I’d greatly appreciate it if you have any tips as to where I might start looking. Thanks in advance, and I look forward to more posts on this fantastic blog

@Xiaolu – First off, congratulations! I’m sure you’ve accessed http://eatright.org for some information regarding the field (plus more!). When I was in school, I worked as a Nutrition Assistant at a hospital nearby. I was around RDs everyday and it was a great environment. Besides the hospital, people often look into working at gyms, WIC, public health nutrition organizations, and also with other private practice dietitians in the area. Tap into your school’s network and attend nutrition organization meetings (network network network!), ask professors where you can market yourself for part-time work, and look at your state and district’s dietetic association page. Good luck and hope that helps!
