Zucchini Mini-Muffins with Raisins


Thinking of what kinds of meals I would give my little one has been a good exercise for me, to be more flexible in thinking outside of the box. For example, she doesn’t like oatmeal or bananas anymore, and doesn’t care much for eggs, and I had to think about what to give her for breakfast. I wanted to add in some fruits and vegetables, and these zucchini muffins sounded good. I got the recipe from Simply Recipes, and swapped out the all-purpose flour with white whole-wheat flour (not whole-wheat flour – I did that once and the muffins were too tough and gritty). I added in some raisins and the muffins turned out delicious and moist. I only made half a batch, but this produced 20 mini-muffins. I ended up freezing half the batch for later since I didn’t want her to get bored of it. How happy was I when my daughter ate TWO of these mini-muffins with some avocado for breakfast? Stoked!
