
Continuing with my previous post on pandan goodies, here’s an easy recipe for Pandan Coconut Ice Cream Pops. I like to whiz it in the ice cream maker before I put the mixture into popsicle molds so that it’s less dense like an ice cube, and more creamy like the popsicles you buy at the store. You can definitely use light coconut milk if you have it.
And might I also say, I know it’s been crazy-hot all over the country this season, so popsicles are a good bet! My friend came over one day and she shared some of these popsicles with my baby, who loved them. Yum yum!
Pandan Coconut Ice Cream Pops
serves 6
1 1/2 cups coconut milk
2/3 cup fat-free milk
1/4 cup pandan liquid
1/4 cup sugar + 1 tsp sugar
Blend all ingredients together in a medium bowl and chill until cold. Freeze in an ice cream maker according to manufacturer’s instructions until it looks like ice cream or frozen yogurt (15-20 minutes), then spoon mixture into popsicle molds and freeze until firm.
