Happy Independence Day, friends! First, I want to thank everyone that serves or has served our country. You protect our independence and I really am grateful for that!
I don’t have a new recipe for you this week, but here’s a little throwback to a red, white, and blue tart that you can easily whip up today (the recipe doesn’t have raspberries but just buy a little and throw ‘em in for some patriotism!). Last night I prepared tons of veggies (a variety of farmer’s market squashes, red onions, and corn) to slap on the grill for some barbeque today. I think I’m anticipating the veggies more than the meat!
I’m very excited for this weekend, because today, our best friends are flying in to spend a few days with us! (One of my BFFs is married to P’s, so I think that’s pretty awesome). Last year they came to visit and I was still in a wheelchair, and they cooked for us and just hung out at home with us. So I think this trip will be so much fun because I get to move around now!
