Mango Lassi Popsicle Bars

Mango lassi is a popular drink you’ll find in many Indian restaurants, made with plain yogurt, sweetener, pureed mangoes, and sometimes with spices such as cardamom.  Here, I take the typical mango lassi and freeze it into popsicle molds.  Of course, you can also skip the freezing part, and just drink as is between two people.

This is a healthy variation to the regular popsicles you’ll find at the grocery store.  Whole mango is an excellent source of vitamins A and C (go antioxidants!).  The probiotics in plain yogurt can help keep the immune system strong (look for the label that says “live with active cultures”), and of course, calcium is essential for bone health.  These are ridiculously easy to make, and you won’t go back to buying artificially-flavored, sugar-laden popsicle sticks next time you go to the store.  You definitely won’t feel guilty feeding this to your kids on a hot summer day!

Mango Lassi Popsicle Bars

makes 4 popsicles

1 cup peeled, seeded, diced mango (make sure it’s ripe, when the skin gives when you put gentle pressure on it)

1/2 cup fat-free, plain yogurt

2 Tbsp skim milk

1 Tbsp honey

1.  Blend all ingredients in a food processor or blender and pour into popsicle molds.  Freeze until firm and ready to eat.  To unmold, run warm water over the molds until able to detach popsicle from the container.

    Tried this today and it was yummy! Instead of fresh mango I used mostly-thawed frozen diced mango. I poured out two ice cubes’ worth to make mini-popsicles for my children, then drank the rest myself. I don’t normally add sweetener to my smoothies, so I probably could have reduced or omitted the honey because it tasted sweeter than it needed to, in my opinion.

    I make something really similar for my son. I’ve been using a honey flavored Greek Yogurt and fresh peaches, berries or whatever other ripe seasonal temptation I have lying around. I have to say that while these are indeed cool (literally and figuatively) the coolness quotient is jacked WAY up because my popcicle molds are in the shape of rocket ships!….hey, I have a 5 yr old boy, what can I say ;)
