My favorite part of the egg is the yolk. Runny over hash browns, or mixed with sharp mustard in deviled eggs. And I am a fan of local, truly free range eggs. The yolk is often orange, packed with nutrition.

phi - thyme is such a cute and delicate little herb that you'll love the addition to your eggs!

food-fitness-fresh-air - thanks for coming by the site! hope to see you back soon! :)

leslie - very true. My brother is studying to be an optometrist so I occasionally send him articles here and there to show him how much nutrition and eye health are linked together! :)

Nice article that included the benefits of including eggs in our diet.

Actually this antioxidant is found in a wide variety of fruits and vegetables, but egg yolks seem to be the best source because they are more bioavailable and better absorbed by the body.

Lutein and zeaxanthin are two critical carotenoids that make up our macular pigment. Our bodies cannot make this antioxidant - we must get them through our diet or supplements. Studies have shown that if we include foods high in these two antioxidants, we may reduce our risk of macular degeneration. To see a list of other foods to include that are rich in lutein go to http://www.webrn-maculardegeneration.com/foods-high-in-lutein.html
